DEFINITION OF EVAPORATION 

 The phenomenon of changing liquid into vapour (gas) at any temperature below its boiling point is known as evaporation.

Water can slowly changes to water vapour below 100⁰c (boiling point of water). Example drying of wet clothes, water in wet clothes evaporate slowly at temperature below 100⁰c and becomes dry.

HOW EVAPORATION OCCURS 

Particles of matter are always in continuous motion at given temperature. And the particles inside the matter process energy(kinetic energy) for motion. Difference particles has different amount of energy. In case of liquid small fraction of particles on the surface which having higher amount of kinetic energy, is able to break away from the force of attraction of other particles and get converted into vapour. This is how a liquid can convert into gas below its boiling point. This phenomenon is called as evaporation
