RANCIDITY

 When fats and oil kept exposed in atmospheric air get oxidised. As a result it’s taste and smell changes and become rancid.

Eg:- if oily foods like fried chips kept open for long time, its taste and smell will change (oil and fat get oxidised) because of rancidity.

Different methods to prevent rancidity of food

  1. Adding antioxidants to the food containing fats and oil to prevent oxidation.
  2. Keeping food in air tight containers to slow down oxidation.
  3. Bags of oil fried chips is flush with gas such as nitrogen (non reactive gases) to prevent oxidation.
